These make a great dish, served with a heap of vegetables and salad! I am always looking for meals that are nourishing but still feel like a treat and these definitely tick the box!
Journey to Veganism…Week 1
Hi all!
I am writing today about one of my major goals for 2016- to become 100% Vegan. I am currently vegetarian and go through phases of cutting out dairy products. My aim is to completely cut out dairy and eggs, as well as changing my cosmetics to natural and vegan products. Here is how I got on in my first week!!
Beetroot Coconut Brownies with Strawberries
Wow, these brownies are so tasty and healthy!
Free from refined sugar, dairy and gluten, they make use of beetroot and coconut flour-providing fibre, folic acid, manganese, and potassium.
Spicy Red Lentil and Tomato Soup with Kidney Beans
This is a lovely, thick soup that is perfect for dipping bread into !!
Lentils are a brilliant source of fibre, as well as copper, manganese, zinc and vitamin B1, B5 and B6. Red lentils are great for soups, or daals, as when cooked they form a thick mush. This is super for a soup base, especially for those of you who are gluten free and want to avoid adding flour to thicken up your soup!
Review: Raw Living Juicer
Hi guys, so this is my first review, which I am hoping to make a more regular thing!! I decided to write about my thoughts on my new Raw Living juicer which I got for Christmas from my lovely fiance.
I made the switch from a centrifugal to a masticating juicer, and it really has made a difference! I’ve been meaning to make this change for a long time, but it can be difficult to splash out the money for a new and more expensive juicer! But I have listed some reasons below to explain why it is definitely worth it!!
Lentil Stew topped with Turmeric and Paprika Sweet Potato Mash
Looking for a warming Winter meal? This recipe is perfect for cold evenings by the fire, it is satisfying, full of flavour, and even the colours will help you feel more cosy in front of  the fire!
Beetroot Cacao Smoothie
I love to use beetroot in smoothies and juices. Not only does the natural colour really make for a treat, but the antioxidants and liver cleansing properties make beetroot an excellent addition to the diet. Consuming beetroot raw is ideal as it allows for quick and easy preparation, and also means that nutrients are not lost during cooking.
Beetroot is particularly high in folate and manganese, and contain special phytonutrients that are not common in other vegetables. These provide antioxidant, anti inflammatory, and detoxing effects.
All Natural Beauty
Hi guys! I am currently preparing myself for a change which will involve switching to an all natural beauty regime! This is to reduce the amount of toxins taken in by my body, and also to further my journey of a plant based diet and lifestyle.
Sweet Potato Topped Nachos
This has got to be one of my favourite cheat meals- Perfect for when you are craving a take away, and does not take long to prepare! Which makes this ideal for a lazy Friday night ! The ingredients are also all quite standard, and you probably have most of them sitting in the cupboard/fridge. If not, you can easily improvise!
Black Bean Burgers with Quinoa and Sweet Potato
Black beans are one of my favourite beans to cook with. They are great in salads, stews, anything Mexican, and even work in baking! I tried out black bean and sweet potato burgers, and they are delicious!!
