Pea & Cashew Pesto Pasta

Hi Guys!

I’m sharing a meal idea today that is a great substitute for those creamy, cheesy pasta meals we all love!

This is something that I missed when cutting out dairy and gluten from my diet, so I’m glad to find a meal that hits the spot- comfort food that is healthy!

The pesto is a recipe from Honestly Healthy, and is so simple and so satisfying!! It’s  really good replacement for pesto, which usually contains cheese. Even so, it is always nice to make your own and avoid processed foods!! This works out cheaper and literally takes two minutes to prepare.

Beetroot Cacao Smoothie

I love to use beetroot in smoothies and juices. Not only does the natural colour really make for a treat, but the antioxidants and liver cleansing properties make beetroot an excellent addition to the diet. Consuming beetroot raw is ideal as it allows for quick and easy preparation, and also means that nutrients are not lost during cooking.

Beetroot is particularly high in folate and manganese, and contain special phytonutrients that are not common in other vegetables. These provide antioxidant, anti inflammatory, and detoxing effects.

Red Lentil Soup

Lunch today was a red lentil soup which was inspired by recipe on A Cedar Spoon (which I found on Pinterest…where else!) As usual I didn’t have ALL the right ingredients so I made some slight adjustments here and there.
